Yeasts occur everywhere in nature. Yeasts specialise in products containing sugar, such as grapes and grape juice. Among other things, the yeasts feed on the sugar. In the process, individual flavours and alcohol are produced. When grape must is fermented into wine, the yeasts sink to the bottom of the fermentation container. The better the grape must, the more character and fullness this sediment (Geläger) has. This batch, generously separated from the wine and slowly distilled, is the basis of this fine - aromatic distillate.
